Nut Free Muesli Bar
Snack, school lunchbox
1/4 cup cacao butter or unsalted dairy butter
1/4 cup honey or rice malt syrup
1 and 1/2 cups rolled oats
1/4 cup cranberries or dried fruit of choice
1 tbsp chia seeds
1/4 cup sunflower seeds
2 tbsp flour of choice (I used a gluten free plain flour)
Preheat oven to 180 degrees celsius and line a baking dish (roughly 25x15cm) with baking paper/silicone to cover base and edges.
In a medium heat safe bowl, add all ingredients except honey and butter. Mix until combined
In a small saucepan, add the honey and butter. Stir regularly until butter has melted.
Pour honey mixture over dry mixture and mix until well combined. Spoon into lined baking dish and press down with the back of a wet spoon.
Bake for 20 minutes. Remove from oven and allow to cool to room temperature before slicing into bars, using a sharp knife. Store in an airtight container in the fridge for up to a week.
