Ask and you shall receive! This quick and healthy Weetbix slice was a community request from a mum on Instagram. If I'm honest, I thought Weetbix as a slice was a little strange but I am now (happily) eating my words! This is SO simple to make, suitable for all ages from around 10 months (just skip the chocolate topping) and you likely have the ingredients in your pantry now!
Preheat oven to 180 degrees C. In a blender, add the weetbix and dates and blend until a fine consistency is reached.
Add coconut oil and eggs and blend until mixture sticks together when pressed. If mixture appears too crumbly/dry, add an additional egg. Spoon mixture into a baking tin and press evenly with a spatula (approximately 2-3cm thick).
Bake 20 minutes or until toothpick inserted into slice comes out clean. Cool in tin on wire rack 5 minutes. Remove from tin; cool completely.
Optional: Melt chocolate in microwave safe bowl or over a double boiler and drizzle over slice. Place in fridge to set, then slice into squares.

NOTES: This will keep for around 5-7 days and is best stored in the fridge (can be frozen). . TESTED EGG-FREE VERSION Replace 2 eggs with 2 level tbsp flaxseed meal combined with 1/2 cup room temperature water. Allow to sit for 5 minutes and add as per instructions for egg.
